Introduction

In this edition of the Enotri Kitchen we showcase a Melon salad and Salmon paired with wines from the Enotri Cellar. These recipes are a perfect way to start off the Summer season with fresh and beautiful wines paired perfectly.

Recipes

  • Ingredients

    • Watermelon

    • Cantaloupe

    • Honeydew

    Honey Citrus Mint glaze

    • Lime juice

    • Lemon juice

    • Honey

    • Mint

    1. Using a melon baller scoop round spheres out of each of the melons and place them into a medium-sized bowl.

    2. In a small bowl add the lemon juice, lime juice, honey and mint and whisk. Pour over the salad and mix until incorporated.

  • Ingredients

    • Salmon Fillet

    • Garlic

    • Paprika powder

    • Dry oregano

    • Salt

    • Olive oil

    • Lemon juice

    1. In a mixing bowl add all ingredients for Salmon Marinade, whisk to mix everything.

    2. Pat dry the salmon fillet and then massage the spice mix all over. Cover the bowl and leave it in the fridge for 10 minutes.

    3. Heat a cast iron pan and pour a little oil. Layer the fish fillet and cook for 4 minutes on each side.

    4. Once the fish is cooked, serve it with the salad on the side. Sprinkle feta cheese on the salad and enjoy the dish.
